If spatters occur with great frequency, keeping the oven clean may be difficult. Programmed cooking is another feature. Delay-cook ovens have been available for some time on electric ranges. Gas range ovens with programmed cooking will usually be the cook-and-keep-warm type. Cooking begins when food is put into the oven. As the end of cooking time approaches, the oven temperature drops to about 170° F. and is held at that temperature until the food is removed. Smooth-top ranges provide a new look for the kitchen. Glass ceramic materials have been developed to withstand normal banging and bumping and high cooking temperatures. Pans with smooth, flat bottoms should be used. A special product is available to clean cooked-on spots if they occur. The heat-up and cool-down times are longer than with normal gas or electric ranges.

The microwave oven is a new method of heating food. Microwave energy, much like radio and TV radiant energy, is produced and directed into the oven. The oven has special locks and seals designed to keep microwave energy in and protect the user. Materials such as glass, glass ceramic, china, pottery, paper, and some plastics allow the energy to flow through and are used for cooking utensils. Microwave energy enters food directly. Molecular agitation inside the food produces heat. Cooking times are much shorter than usual and browning will not take place, except for something as large as a roast that requires a long time to cook. New utensils have been developed that absorb the energy, and if preheated will brown foods in the oven while cooking quickly with microwave energy. The family that buys a microwave oven will probably enjoy quick heating and reheating of foods when many busy schedules must be observed. But they will need to spend time and effort to learn to make the best use of it. (Some heart pacemakers are affected by microwave energy, so a pacemaker wearer should consult his physician before purchasing a microwave oven.) Some concern has been voiced about leaks of microwave energy. It is important to point out, however, that microwave lays are longer than visible light and their effect is only to heat.

Refrigerators. The primary function of the refrigerator is to provide storage that will keep foods fresh and safe for a long, time. The size will depend on both the size of your family and how frequently you shop. Since storage space is so important, special attention has been pointed to the top shells and compartment design. Temperatures in frost-free refrigerators are even throughout the unit, and foods cool to safe storage temperatures faster. But unless foods are carefully wrapped and sealed they will dehydrate. The frost-free refrigerator may be almost double then refrigerators with manual defrost freezers. Add-on icemaker is available for some built-in types. Compact refrigerators may be useful for the family room or a vacation home. They are usually manual defrost.

Freezers. Home freezers are enjoying a spurt in popularity. The types and amounts of frozen foods have more than doubled in the last 10 years. We can expect them to double again in the next 10 years. A freezer allows you to shop less frequently. This is important if the supermarket is distant, and it fits with the trend toward busy family lives and more working women. Many families enjoy freezing fresh foods and preparing foods to freeze for later use as well. An upright freezer has easy-to-see-and-use shelf space. Most are frost-free, but may cost more to operate. A chest-type freezer costs less than an upright type, but takes up more floor space and makes reaching foods at the bottom more difficult. It needs defrosting one to three times a year. Some types have push button flash-defrost and a bottom drains to help in defrosting more quickly. A compact freezer saves space.

Dishwashers. Dishwashers were a luxury appliance 15 years ago. Today, one family in four has one and would hesitate to give it up. Estimates are that 40 percent of homes will have a dishwasher in only a few more years. It may be the next new appliance you buy. Dishwashers are popular for several reasons:
(1) They save an important block of time each day,
(2) They reserve kitchen space because used dishes and utensils go right into the dishwasher instead of cluttering the counter,
(3) And they get dishes cleaner and more sanitary than if hand washed and dried.
The family's role in getting clean dishes is important. Water must be soft and hot (140° F.-160° F.) and the proper amount of the right detergent must be used.
The dishwasher instruction book will say what can and what cannot be washed and provide charts for proper loading of racks. In the water distribution system, spray arms direct water onto dishes. Water must reach every dish. A spray arm beneath each rack may be the best method for doing this. You have a number of cycle choices. Regular and rinse and hold. Also offered are soaking, utensil, short, and gentle cycles.
Waste Disposers. Food-waste disposers eliminate the trash chores, and odors once associated with trash cans. To make the heal me of a disposer; all wastes should be ground immediately. Washers and Dryers. We expect more of laundry appliances than just clean, dry clothes. A family's clothes are made up of many fibers from cotton and wool to polyesters and acrylics. Many washers and dryers are larger today than they used to be. They can handle more clothes at a time, but they also use more water and need more detergent and other laundry aids to wash big loads. New washers and dryers offer more flexibility for better laundry results. However, making the best use of them may mean revising laundry practices. Most manufacturers include a laundry handbook with their washers and dryers to help. Now, 120-volt dryers are also available when a 220-volt circuit is not available. The 120-volt dryers will usually be slower, but are more economical to operate. Water temperature selector switches allow a choice of wash and rinse water temperatures for many clothes load types. Water level controls allow small loads to be washed with water and detergent savings. Agitation and spin speed selectors give vigorous or gentle action for both normal and special loads. With fully-programmed controls you select the button for the type of wash load, and the proper temperatures and speeds will automatically be used in the cycle. In dryers, look for the following: lint filters, which make it easy to locate and empty lint; temperature choice, from air fluff to hot to suit all clothes load types; fan speed, from gentle to normal for delicate to normal loads; drying sensors, which stop drying when clothes are just right; a drying rack, to dry such things as canvas shoes without tumbling. Compact washers and dryers are good for small families with small loads to wash or where space is limited. Compacts do not usually offer as many features as standard-sized washers and dryers. Washer-dryer combinations are still around and may solve space problems. Both front-loading washers and washer-dryer combinations use much less water and detergent than the top-loading washer.
